Chop your seasonings, clean and score the skin of your fish before adding salt and pepper.Add a tablespoon of good oil to a pan over medium heat add all your aromatics (lemongrass, galangal/ginger, lime leaf, onions, garlic, chilli and thyme).Once fragrant (about 2 minutes) add sea bass.
